If you have leftover chicken, make chicken mayo and use it as a filling (similar to Woolies Mini BBQ Chicken Pancakes).
Add whipped cream, blueberries, and sugar free syrup to your pancakes for a sweet alternative. Carb Smart has a great range of sugar free, keto friendly syrups.

Ingredients
2 large free range eggs/organic
60g mascarpone/cream cheese (room temperature)
pinch of pink Himalayan salt
butter/coconut oil
Preparation
In a small mixing bowl, whisk the eggs and mascarpone together until smooth.
Add the salt.
Cook the pancakes in a non-stick pan over medium heat (just like you would cook regular pancakes).
Once bubbles form on the surface, flip your pancake and cook for another few seconds.
