Use alternative veggies like peppers.

Ingredients
1/4 head broccoli
1 1/2 tsp butter
2 large free range organic eggs
2 tbsp water
pink Himalayan salt & pepper to taste
Preparation
Chop broccoli very fine.
Whisk eggs, water, salt, and pepper in a small bowl.
Melt the butter in a skillet. Add the finely minced broccoli and sauté for a few minutes.
Pour in the egg mixture.
As the eggs begin to set, gently pull the eggs across the pan with a spatula.
Continue doing so until the eggs are cooked to your liking.
