Baked Fish with Creamy Lemon Sauce

Serve with a side salad or Broccoli Bacon Salad.

Ingredients

  • 4 x 150g skinless, boneless fish fillets

  • 4 tbsp butter

  • 1/4 cup heavy cream

  • 1 clove garlic, minced

  • 1 tbsp Dijon mustard

  • 1 1/2 tbsp lemon juice

  • 2 tbsp onion, finely chopped

  • Fresh parsley and lemon slices, to serve

  • Pink Himalayan salt & pepper to taste

Preparation

  1. Preheat oven to 200°C.

  2. Place fish in a baking dish and sprinkle both sides with salt and pepper.

  3. Place butter, cream, garlic, mustard, lemon juice, salt, and pepper in a microwave-safe jug or bowl and microwave until melted.

  4. Sprinkle fish with onions, then pour over the sauce.

  5. Bake for 10-12 minutes, or until fish is just cooked.

  6. Remove from oven and transfer fish to serving plates. Spoon over sauce, and garnish with parsley and lemon wedges.
