Ingredients
Almond Flour Version:
3/4 cup almond flour
1 1/2 cup mozzarella
2 tbsp cream cheese
1 egg, beaten
Coconut Flour Version:
1/3 cup coconut flour
1 1/2 cup mozzarella
2 tbsp cream cheese
2 eggs, beaten
Preparation
Preheat the oven to 200°C and line a baking sheet or pizza pan with baking paper (a silicone mat works well).
Place the mozzarella and cream cheese in a large bowl. Microwave for 90 seconds, stirring halfway through. Stir again at the end until well mixed.
Stir in the beaten eggs and flour. Knead with your hands until a dough forms. Wet your hands lightly with some water or oil if the dough sticks to your hands.
Spread the dough onto the lined baking pan. You can use your hands or place the dough between two sheets of baking paper and roll with a rolling pin.
Prick a few holes in the crust to prevent bubbling.
Bake for 6 minutes. Poke more holes in any places where you see bubbles forming. Bake for 3-7 more minutes, until golden brown.
Add toppings and return to oven until toppings are cooked and cheese is melted on top.
