Ingredients
4 cups chopped broccoli, raw
2 cups beef stock
2 cups grated cheddar cheese
1/2 tsp mustard powder
1/2 tsp garlic powder
125 g fresh cream
1/4 cup butter, salted
Preparation
Gather all the ingredients listed and measure them out accurately.
In a large pot, bring the beef stock to a boil. Add the chopped broccoli and cook until
tender, about 5-7 minutes.
Using an immersion blender or a countertop blender, blend the cooked broccoli and stock
until smooth.
Return the blended soup to the pot over low heat. Add the grated cheddar cheese, mustard
powder, and garlic powder. Stir continuously until the cheese is fully melted and the soup is
smooth.
Gradually add the fresh cream while stirring. Add the butter and continue to stir until fully
melted and incorporated into the soup.
Taste the soup and add salt or pepper if needed, to your preference.
