Keto Boerewors & Egg Skillet

  • 200g boerewors, sliced into 2cm rounds

  • 4 large eggs

  • 1 tbsp butter

  • ½ cup cherry tomatoes, halved

  • ¼ cup baby spinach

  • 2 spring onions, sliced

  • Salt, black pepper, and smoked paprika to taste

  • Fresh parsley to garnish

Preparation

1. Slice the boerewors into rounds (about 2cm thick). Heat a large non-stick pan over medium-high heat — no oil needed as the sausage will release its own fat.

2. Add the boerewors to the pan and cook for 5–6 minutes, turning once, until nicely browned on both sides. Remove from the pan and set aside.

3. Reduce heat to medium. Add the cherry tomatoes to the same pan and cook for 2–3 minutes until softened and slightly blistered.

4. Push the tomatoes to one side. Add the butter, then crack in the eggs. Scramble gently, folding slowly until just set — they should still look slightly glossy.

5. Return the boerewors to the pan. Add the baby spinach and spring onions and toss everything together for 1 minute until the spinach wilts.

6. Season with salt, black pepper, and a pinch of smoked paprika. Garnish with fresh parsley and serve immediately.
