Ingredients
200g boerewors, sliced into 2cm rounds
4 large eggs
1 tbsp butter
½ cup cherry tomatoes, halved
¼ cup baby spinach
2 spring onions, sliced
Salt, black pepper, and smoked paprika to taste
Fresh parsley to garnish
Preparation
1. Slice the boerewors into rounds (about 2cm thick). Heat a large non-stick pan over medium-high heat — no oil needed as the sausage will release its own fat.
2. Add the boerewors to the pan and cook for 5–6 minutes, turning once, until nicely browned on both sides. Remove from the pan and set aside.
3. Reduce heat to medium. Add the cherry tomatoes to the same pan and cook for 2–3 minutes until softened and slightly blistered.
4. Push the tomatoes to one side. Add the butter, then crack in the eggs. Scramble gently, folding slowly until just set — they should still look slightly glossy.
5. Return the boerewors to the pan. Add the baby spinach and spring onions and toss everything together for 1 minute until the spinach wilts.
6. Season with salt, black pepper, and a pinch of smoked paprika. Garnish with fresh parsley and serve immediately.
Tips
Boerewors is a South African staple available at virtually every Checkers, Pick n Pay, Woolworths, and butcher across the country. This breakfast skillet is a one-pan wonder that comes together in under 20 minutes and will keep you fuelled well into the afternoon. Look for a boerewors with minimal fillers — Woolworths and most artisan butchers carry a clean, high-meat variety. Serve straight from the pan for a fuss-free family breakfast, or portion into containers for easy weekday meal prep. Pro tip: don't overcook the eggs — remove them from the heat while still slightly glossy for the creamiest result.
