These Chewy Choc Chip Collagen Peanut Butter Cookies are everything you love — rich, nutty, chewy, and loaded with chocolatey bites. Plus, with a boost of hydrolyzed collagen peptides, they're a sweet way to sneak in some extra collagen into your routine. Perfect for a quick snack, a post-workout bite, or just because you deserve a treat!
Ingredients:
1 cup creamy peanut butter
1 cup allulose (or regular brown sugar if not low carb)
1 teaspoon baking powder
1/2 teaspoon salt
2 teaspoons vanilla extract
1 egg, beaten
40g dark chocolate chips (or chopped) (I used Lindt Dark Choc Orange in this recipe)
2 scoops Uvora hydrolyzed collagen peptides
Instructions:
1. Preheat the oven to 180°C.
2. In a medium mixing bowl, combine all of the ingredients. The mixture will be thick.
3. Using a measuring spoon/cookie scoop, place the dough onto a greased cookie sheet. (Note: The cookies won't spread much while baking, so shape them to your desired size beforehand.)
4. Bake for 10-12 minutes for soft and chewy cookies, or up to 15 minutes for a crunchier texture.
5. Allow the cookies to cool for at least 10 minutes to finish setting before enjoying.
Notes:
These cookies are low carb and sugar-free.
- Regular brown sugar works if you're not following a low-carb lifestyle.
You can substitute the chocolate with any chocolate you prefer.
Cookies turn out super chewy — perfect for a delicious snack.
